2 in Food Safety in Catering
The Level 2 in Food Safety in Catering
has replaced the basic food hygiene and foundation
certificates. There is no requirement to have completed Level
1 in Food Safety in Catering.
South Staffordshire Council is an accredited training centre for
Chartered Institute of Environmental Health (CIEH). We are
committed to delivering high quality, affordable training courses
to food businesses and food handlers.
All our trainers are qualified food safety officers as well as
registered trainers with the CIEH. The awarding body for the
examination is the Chartered Institute of Environmental
The CIEH works in partnership with organisations around the
world to provide qualifications, training products, services and
support materials that enrich the educational experience of the
public in all aspects of environmental health.
The course will benefit anyone who works where food is handled,
prepared, cooked, served or sold including people who work in
manufacturing units, pubs, cafes, restaurants, care homes, take
aways and luncheon clubs. Food safety law also requires
anyone who handles open high risk food to be trained commensurate
with their job role.
The course syllabus includes:
- Introduction to Food Safety
- The Law
- Food safety hazards
- Taking temperatures
- Refrigeration, chilling and cold holding of foods
- Cooking, hot holding and reheating of foods
- Food handlers
- Principles of safe food storage
- Food premises and equipment
The course duration is 6 hours with a multiple choice exam at the
end of the course. The course is delivered in English but
examination papers are available in other languages on
request. However, in order to complete this course it is
necessary to have a good understanding of English. Should

Successful candidates will receive the Level 2 in Food Safety in

Courses currently cost £45 per person, and are
held at Council Offices, Codsall. The cost includes a full
days training, refreshments, lunch, course handbook and exam

least 2 weeks in advance of the course. If it is less than 2

“Fees for every candidate are payable prior to the course in
order to secure a place. Places on the Food Hygiene courses
are limited so we therefore operate a cancellation policy regarding
refund. Any non attendance will be non refundable. If a candidate
is unable to attend then written notification of cancellation is
required at least 7 days before the course date.
A business or organisation is welcome to substitute and send
someone else from its organisation if they wish, by prior
arrangement and after notifying us. No refund will be made for
bookings cancelled less than 7 days before the event, except in
exceptional circumstances and then only at the discretion of the
Training Programme Manager”.
